How food is processed matters, from milling and pressing to grinding, culturing and formulation. We state what we believe, set standards, practise them and build the evidence.

01 · Why processing matters

Same ingredient. Different food.

Two bags of wholewheat flour, two bottles of mustard oil, two packs of turmeric: same ingredient list, very different foods.

Speed, heat, what is removed, how an ingredient is pressed or polished, and how long it waits before it is eaten all change what reaches the plate. Processing is not a neutral step between farm and kitchen. It is where much of a food’s character is kept, or lost.

Industrial processing optimises for throughput and shelf life. We start from a different principle: process at modern scale while keeping as much of the ingredient as possible. We call our processing standards Thermal Integrity Preservation: keep heat low, keep the ingredient whole, keep the processing chain short.

02 · Processing domains

Eight domains, one principle.

Milling

Slow stone milling keeps flour closer to the grain it came from.

We mill flours on an emery-stone atta chakki in our store, in small batches, in textures from superfine to extra coarse.

An operating standard of under 42 °C for milling. Flours milled from the whole grain, with nothing sifted out.

Systematic temperature logging, and the effect of milling temperature on nutrients and aroma.

Pressing

Slow mechanical pressing keeps the character that solvent extraction and heavy refining strip away.

Our oils are wood-pressed by the kachi ghani method, or cold-pressed.

How our oils compare with refined equivalents, measured in an accredited laboratory.

Grinding

Whole spices, slowly ground, keep the aroma that makes a dish.

Ground spices stone-ground where possible, with no artificial colours or fillers. Whole spices left whole.

How aroma holds up in the weeks after grinding.

Fermentation and culturing

Natural fermentation and culturing are among the oldest ways of making food better, not just longer-lasting.

Our ghee is bilona ghee: made from cultured curd, churned in small batches. Natural fermentation is one of our brand criteria.

Formulation

Convenient everyday food can be built from whole ingredients, without shortcuts.

We develop new products in-house, from traditional recipes and whole ingredients.

Where nutrition values are estimates, we call them estimates until laboratory analysis is complete.

Preservation

Freshness should come from how food is made and kept, not from what is added to it.

No artificial preservatives, additives or synthetic fortification, in any category.

How long freshly milled flour keeps its quality using physical methods only, such as moisture control and packaging.

Packaging and labelling

Our packs carry manufacturing and use-by dates, storage guidance and an allergen statement.

Labels that tell the whole story, in plain language, with no claim we can’t stand behind.

Freshness and proximity

Staples are at their best soon after they are made.

We mill flour close to our customers, in small batches and on order.

04 · Quality and safety

Safety is the floor.

Slomilled Foods operates under FSSAI State Licence No. 10826005000853, held by Truesubstance Food Science Private Limited as manufacturer and retailer at M3M Urbana, Gurugram.

Our next step is formal technical standard operating procedures, so every store meets the same specification, and testing of incoming ingredients for contaminants.

05 · The evidence programme

What we are measuring.

  1. Temperature. The heat each grain reaches on our stones, and what it changes.
  2. Freshness. How aroma, flavour and key nutrients change in the days and weeks after milling and grinding.
  3. Comparison. Our flours, oils and ghee against industrial equivalents, on independent laboratory tests.
  4. Consistency. One specification, met by every batch and every store.
  5. Formulation. Which traditional blends perform best in a roti, a dosa or a breakfast bowl.
